British cheesemaking is inseparable from the British countryside. The grass, the weather, and the breed of cattle all change through the year — and the cheese changes with them. Choosing cheese in season is one of the most reliable ways to improve what ends up on your board.

Why Seasonality Matters

Milk changes dramatically through the year. In spring, cows return to fresh pasture after winter hay feeding. The grass is young and rich in beta-carotene, protein, and complex fatty acids. This produces richer milk with a different bacterial profile than winter milk. By winter, cows are back on hay and silage — the milk is subtler, denser, with its own character.

The result: A wheel of Cheddar made from May milk and a wheel made from November milk are different cheeses — even if the same hands made them the same way.

Understanding this is the difference between someone who eats cheese and someone who experiences it.

Spring (March–May)

The mood: Fresh, bright, light.

Spring milk is the richest of the year — cows emerging onto new pasture produce milk high in natural flavour compounds. Soft and fresh cheeses are at their finest in spring, made from the first flushes of that rich, grassy milk.

Summer (June–August)

The mood: Rich, complex, at peak depth.

The long summer days and lush summer pastures produce milk at the height of its complexity. Hard cheeses made from summer milk — and aged through the following autumn and winter — will be at their finest over the next 12-18 months. This is the great vintage season.

Autumn (September–November)

The mood: Harvest richness, the first blues.

Autumn is the most celebrated season for British cheese enthusiasts. The harvest season's grass produces milk with a distinctive richness before the winter shift. Crucially, this is when Stilton begins its finest annual run — the autumn and winter Stilton is considered by most experts to be the best of the year.

Winter (December–February)

The mood: Bold, celebratory, deeply satisfying.

Winter is the season of great British blues. Christmas Stilton, Shropshire Blue, Stichelton — these are the flagship winter cheeses. Hard cheeses made from the previous year's summer milk are now approaching full maturity. Washed rinds and pungent cheeses also have particular appeal in winter — they demand warming drinks and create a sense of occasion.

A Final Note on Seasonality

Not all cheese is strictly seasonal. Many commercial producers — including the major Stilton makers and supermarket Cheddar factories — produce year-round with consistent milk from controlled feeding regimes. For these, seasonality matters less.

But for artisan farmhouse cheese, seasonality is everything. Ask your cheesemonger what's in season. Tell them what time of year you're shopping. They will find you the best thing in the cave right now.
